How do you all build roofs? Im having trouble getting a good roof on, do you all use floors or?

Nope. I use roof thatching. If you're having stability problems, it's because you're trying to build too big too soon. Better building options become available as you progress, enabling better supports for roofs.
Floor roofs are extremely resource expensive and require a lot of supports. Angled thatch roofs are extremely easy to build and are super inexpensive. They also require less support. Just experiment with it. You get all the resources back if they break or get dismantled.

mix and match 23's and 45's, invert them for better, or more suitable angles.
Use struts and supports. I'm at like 6 stories on my (incomplete)fort, all level 1 tech

Mostly a matter of knowing which pieces snap well to each-other and at what edges/angles. Use ladders and floor plates whenever you need a better perspective - disassembling them when done won't cost you any additional resources.

Keep in mind, stability for wood is 5 Items from soil.
If your roofes collapses get Core wood from Dark forest, the logs can be 4 meter long, makes it easyer

As Samoth just said, I used exclusively 45 degree roof until I realised that 22 degrees were so much better for a good roof.

Also, get some wood support. As soon as you get hard wood then you can have very high and sturdy roof supports.

I don't get why they can't just give us a flat roofing block that like the wooden floor it would be so much easier.

That's actually really clever to use "natural" walls instead of constructed ones for the base of the structure. Critters can't break those as easily.

Depends
The 45 degree allow to use more room inside if the Roof is the wall too (like on the pic above)
The flatter version is better if your roof is anyway on a decent high

Flooring roofs will deteriorate in water (rain), and not provide protection to things under it You will be repairing the whole building every few days.

I like to mix and match the 26 & 45 to get a good 'barn like' structure...not so much for the 'A' frames.

Don't use floor pieces for roofing, as they won't be counted as roofing for things like your bed and crafting table.

Once you unlock bronze, bronze hatchet and get some Core Wood, it's easy to make roofs like this one.

Because thatch roofing does not work when flat, the water will just pool on top of it and eventually leak. Flat roofing wasn't used by vikings for this reason.
