I've noticed that the required surface flatness depends proportionally on the load of your cart.
For example, if your cart is slightly to medium loaded (im thinking in full stacks of ore) - you can pretty much pull it uphill even a steep path. If your cart is filled more than 3/4 - even the slightest bump wont let you move past it, the surface needs to be perfectly level and smooth.
I think this is an interesting mechanic of the game.
Source: i built a stone road between my main base on a hill and my dock and tried to bring in a cart fully loaded with silver & black metal ore (spoiler alert: it was almost immovable).
Leave on road, run the bit out into the woods to gather an inventory full of mats, run to cart, dump, run back into woods -- I can generally fill a cart with stone or wood in less than an IC day, but would do a LOT less if I were having to run back and forth to the base instead of just between the trees and the road. When you get to the point where you're clear-cutting large swaths of black forest for what you're doing/building, the cart becomes invaluable. The ore from dock -> smithy is just an impatience issue on my part (it's not THAT far to my smithy) but it's handy all the same.

Pack a little wood to build a workbench. When you flip the cart (and you) will build a workbench and quickly repair the cart and disassemble the workbench. Also bring a pick to dig under the cart to flip it back on it's wheels.
A buddy of mine built a ramp of 45 degree roofs down a mountain. It was a pain to get a really loaded cart of ore to start but once we started down it was very nice. You just can't steer anything that heavy while sliding so make sure your lined up in advance :).
It also leads to bad decisions, like trying to pull it really fast between trees without taking time to make a proper road. It's comedy gold stuff.
I guess it kinda reminds me of growing up in upper Michigan, planning a a fun weekend with your friends, and getting stuck in the snow a few miles down the road. "Not again!", you all say. Then years later, it's a funny memory among friends.
A game with built in disasters-waiting-to-happen is good stuff. Hopefully they add more stuff like this to the game. It's even funnier with friends doing cart races for laughs.
It's too bad so many people's spines fell out. Not to mention sense of humor really taking a downturn. It's almost as though people forget it's a game, and think it's actual work.
Seriously, though. Play it as a game. Find the fun in things. If you can't have fun, don't bother playing.
Even when destroyed, carts are easily rebuilt. Stash is not lost. Even if you miss a troll and it destroys the cart - it takes around 20 seconds to set it back up again and continue on.
