I have a screen of my game server(machine) nic settings and the "additional settings" required to actually host. I'd like you to see it so you can compare, but like you.. I don't post my wan ip in public forums.
I have been hosting minecraft, ark, empyrion, forest, and many other servers for years.
From everything you mention, it definitely seems like your server, not your router or the game.
