Worked for us until we went dedicated.
You start your game select sever with friends. Internet is required.
Theoretically, you should be able to. if you both connect to a router, the more powerful PC might run both the server and the game. They would both join by IP. Setting up the server is a bit fiddly, but there are tutorials on many respectable web sites. (I failed 3 solid attempts before finally getting everything working).
If you're tech savvy and know how to get IP addresses and set paths, I'd give it a whack for fun. Especially if you have an old PC laying around and a 4 port wifi router!
May try to do this sadly I'm not the best in the world with computers. I can setup an Ip and change workgroup names but that's probably considered remedial in comparison. I do have an old PC but no router. When it comes to internet we use hotspot from our phones. Works for the most part like streaming and gaming normally but our service is finicky due to us living in the middle of no where.
Hopefully if it's not now in the future they will show Coop through Ethernet cable connection a little love. I will keep trying some different things though and if I get anything to work I'll post it here.

Alternatively, if this doesn't work, you may want to download the Valheim dedicated server to your computer and run it. Then you start the game on the same computer, join your own server via localhost and your wife once again via your IPv4 address.
This is for internet, not LAN.
You may also want the goldberg emulator https://gitlab.com/Mr_Goldberg/goldberg_emulator
which emulates Steams online services so you can play purely via LAN.
