It's a good idea to mark your map with locations of where you pick things... they respawn in the same spots after number of days in game...

I mark the map with a dot and type the initials to help me remember where to go when i need those resources... example RB=raspberry, BB= blueberry, TH=thistle, MR=mushroom etc.
May seem tedious but really helps out when you need those items and can just go right to them to see if they grew back yet.

TIP: Thistle is much easier to find at night since it glows, but of course it's potentially more dangerous at night.

PS I don't use mods so all my advice is for vanilla game.

Do Thistle respawn? As well as carrot and turnip seeds? I don't think so but I may be wrong.

They respawn. Not sure about turnips, but I've gone to the same spots for carrots and thistle before. I've only found the one location for turnips on this world, so far at least, but that gave me plenty to start my own seeding farm.

Really would be nice to grow thistle, also berries, but part of the grind is finding them. They aren't too sparse, a short jaunt through the Forest can yield 20-30 of them without much effort, but I think farming them might make it too easy for some items.

Personally rebuilt a village next to a mountain with a ton of berries, that is definitely a decent option.

And thanks for the info I'll mark them down and check if they respawn.

I use the nexus mod the other guy mentioned. Why? Because being able to plant carrots and not raspberries makes ZERO sense. I planted a thistle garden and it looks so nice glowing but the thistle seems a bit larger than normal

I just use Eik power and run trough the black forest and pick them up, you get like 30 in a few minutes if your lucky, they also grow in swamps.

If items are hard to harvest, use less of them.
There are lots of easy access foods like turnip stew, honey and lox meat.

i've had no problems getting thistle without mods. as ppl already said just pick them up whenever you see them. Mark bigger clusters that are close to your base/portals

They do. Our forest base even has a single thistle inside the wall that has been harvested many times.
