Why do my roofs and walls sometimes explode when i set them?
I'm trying to place a roof, but it blows up almost immediately after i build it.

Building pieces lose structural integrity as they get more pieces away from solid ground (or other items treated as ground). Parts that are blue when you mouse over them are considered grounded, and will turn to green, yellow, or red depending on how many pieces they are from the grounded one. Parts added beyond red simply break immediately.

You'll need to add some support beams or build smaller structures to stop parts from breaking off.

For a specific building component, find the minimum number of other components connecting it to the ground. The higher this number, the more unstable it is.

Stone is a different story...

Wood buildings can be built to the max height of 3 layers without iron infused wood or stone bases. The third floor will require a significant number of bracers and should work like an attic, such that it is small, and part of the inertior space between the 2nd floor and the roof.

How do i know if i start to build a wall and a roof from the other side of a building if they meet properly? Can i somehow create a blueprint or something like that?

I would just create a single small section of the structure and see if it connects properly. If it does, then you can repeat that setup until the structure is as long as you want it.

Fortunately, you don't lose anything when they break, so it should only take a minute to see if it works.
