I suggest looking at the damage dealt per hit, and try different weapons / arrows. Then use those with the highest DPS. Obsidian arrows around 60 per hit, spear around 60-80 (iirc).
I had also around 15 wolves, all died when Moder AOE-ed them. I built a stone net around the summoning area hoping that she'll be trapped, but she spawned above it. I have a stone keep within 50m, she one-shot a corner of the keep destroying my portal within.
At that point you should be able to prepare stews and sausages, not to mention some mead which should be sufficient to keep your stamina and HP high. You could go to the Plains real quick to grab Cloudberries (these white spherical thingies) to make stamina mead.
Additionally, I tried making fortifications but they got destroyed easily, though putting a bunch of fires around the summoning area did some extra damage to her (and to me) and kept stamina regen decent.
