I kind of assumed that the game was more harsh than that.
Waves only move the boat up and down, not side to side.
You can also take it to shallow water and axe it down to its parts.
Yup, just smash it up close to shore so you can recover all the crafting materials and put them in a box. Make new boat when ready to sail again. I do this often although I also have two slips for boats when I am just dumping ore and leaving soon.

This is correct.
The boat does not move (besides up and down) when no one is on the boat. You can even stand out of the boat and interact with the storage and the "full physics" of the water will not take place. It will not float away.
In bigger storms, the boat may hit bottom or rocks beneath it that can cause damage. Overall, I don't think I've ever had a boat destroyed from just sitting there. If anything, I've had boats destroyed because I didn't clear the area and some enemy came by and just whacked on it. So now I always build a wall around the boat when I want long term storage. I've never had a boat destroyed that was walled off.
Sure, you can destroy it and save the resources. Or you can have a cool looking boat sitting in a cool looking dock.

My advice is to bury a workbench near the chest. That way you will not lose the workbench or the items if mobs break the chest.
Please do not try to discredit my advice if you do not understand it.
I have lost boats after mobs destroyed the nearby workbench. Since the workbench was gone then items were subject to normal despawn rules rather than no despawn within a workbench area. Hence why I said to bury the workbench.
It's usually no issues leaving a ship where it is for a while, at least not if you've built a nearby portal and a workbench. Although, I tend to leave it at a place I feel is fairly secure and mark it on the map.
That said - I have lost a longship that was harboured near my base. It drifted out for some reason, had tipped over and was taking damage. I managed to repair it once from the edge of the pier, but I drowned trying to right the ship and it was lost.
I suspect the ship got stuck in the building pieces at the harbour during a storm and glitched out, so probably a one time thing.
