Blackjack is not shuffled after every hand

So I hear this come up a lot - can you count in this game? I would've thought no because why would they let you if they can easily shuffle after every hand, but I asked support and they told me blackjack uses a 6 deck shoe that shuffles after the cards are exhausted. Sounds like they don't even cut the shoe like online casinos do.
