This sounds like it's your first time playing a Resident Evil title, yes ammo isn't gonna be at your disposal 24/7. If you want you can play on Casual with Aim assist, in which zombies become so easy to kill, it's kind of boring in my opinion. Hardcore, I know you'll hate, ammo is even more scarce, and you can't just use ammo all the time same with Standered, but that difficulty is easier.
Hardcore, once you get bit, you'll be from fine, to Danger, and Ink Ribbons are back, so if you aren't a fan of not being able to save all the time, don't do Hardcore.

Saves a lot of ammo, you can also knife them in the head (eyesight) or kneecap again for a stun to kick them again, but not sure if this works in the Remake, will test it in the demo know, but I am 90% sure the first 2 will help. Be resourceful and pick your targets on your target carefully.
And what got me frustrated is that there were two zombies in a tight corridor, I tried shooting them in the head, only one zombie fell down but then got up anyway and another zombie didn't give a damn about bullets in its head. After that I was out of bullets and I had no options left, I couldn't run past them, couldn't run back because there was another zombie.
-Once they are on the floor, use knife. First I cut their legs off and if they are still alive, I'll cut their arms. Without legs and arms, they'll have trouble reaching to us. We can't stomp with our feet.
-Shooting them in the head doesn't do more damage, there is a probability of critical hit when shooting the head resulting in one hit kill. But still, I aim for the leg.
-In one area with 3 zombies, they can't go through a door. I use that door as a shield and just rely on my knife to kill them.
-If you can avoid killing zombie, then do so to save ammo
I've beaten this game in hardcore using Claire once but don't feel like playing hardcore anymore. I also clear the game once in normal without opening the item box. So it is manageable.
just to add my 2 cents. if you didnt start with some add-ons, Clair starts with a pretty weak pistol. so its tolerable that it preforms so poorly.
you get better weapons once you get to the police station regardless of which character you are playing. these include - shot gun, and sub-machine gun. and if you purchased any DLC, you will find the samurai edge (albert model) which is a much better handgun.
and as others alluded to, this game has location based body destruction physics. once i caught on to this, when i enter hallways or rooms that have bodies on the ground, i automatically shoot a knee, so they cant get up, makeing them much less dangerous.
but... all this is superfluous. early RE games were never focused on killing zombies. you may notice that most zombies are mainly time wasters and mostly there to spur you on and keep you from getting bored. as most have said, you arnt required to kill most of them.
the more primary focus of Early RE games was puzzles. either running back and forth to find stuff, trying to figure out combinations on safes, or figuring out weird switch based puzzles. these are the necessaries of each game.
the only things you have to kill are the bosses.
