I think I've pretty much doomed my entire game because I have no healing items or ammo
I'm up to the second boss fight with the deformed monster - in the sewers - and it's just impossible, mostly because I have no healing items, have no ammo except for the flamethrower, and am on dangerously low health. I'm pretty sure I've ruined my game, because there's just no way I can avoid the monster long enough to get the crane thing to hit him. I'm playing on standard difficulty by the way. Should I just start a brand new game on the easiest difficulty? This entire sewers section has just been brutally difficult.

Yes but because I have no healing items and my health is so low, I'm slowly staggering around everywhere and he keeps catching up to me and one shot will kill me.

I know right.. I've got like 3 different save files on my first playthrough xD Grew up on RE2 the original...

welcome to a real RE game,
learn how to have good managment skills, i played the first time with claire i had basily nothing but got through, and played as Leon second time and was way Easier. just learn not to waste bullets on zombie fi you can keep green herbs saved in your item box.

also dont go on easy! all that does it health your health over time and auto aims for you

You can change the Game Mode to Assistance, after dying a couple of times (can't change it back to normal though), could try it this way, maybe it helps.

other than that, IF you start new, make multiple save files and try to conserve as much ammo as possible, you need it later on.

If you are talking about the boss battle that right before saving Ada/Sherry, you just need a flash grenade, which is given to you on the platform. This game does a really good job of giving you the right amount of ammo in a boss fight area. Flash grenade, blind the guy, then send him down with the control panel.

That doesn't always work, I guess you have to do a certain ammount of damage otherwise the container hits him/it and climbs back up on to the platform again

I'm surprised nobody has suggested cheat engine yet.
I mean, using it won't be harming anyone, especially if you have RE online/Renet (or whatever they called it) off.
You could probably give yourself some ammo and a first aid spray.
Though my experience with CE or trainers has been that when you use it once it takes a whole lot of effort not to use it again when you get into another tough spot.

This is exactly why people need to be careful.

Resident Evil isn't your typical run and gun, well not this version anyway.

this is where dodge and weave, saving ammo and finding herbs.. comes into effect. the game needs patience and timing.

Same problem here...
I can't manage to avoid those big enemys in the sewers and the took SOOO much ammo x.x!
No i'm at the lab but it's useless...
I've played RE 1, 2, 3, 4, 5 and 6 but this game is simply to hard for me ^^
However, i like this game :)
