I‘m completely lost with dating. How do you actually make someone come with you to your apartment? For example the bartender at the club. Thanks!

I think you can only go on dates through the dating app on your phone. After you've built the relationship, you have to give a gift, have a condom & rent a hotel room. Then you have sex with your date.

NPCs you can interact with eg. in the club and on the street merely serve as a means to provide you a single side-quest per NPC once you've given sufficient "correct" responses for their "like" meter to be filled up. That, or you can trade items with them.

"Dating" only works with the 3 women in the dating app. Once their "like" meter fills up by responding to them in the right way, just as with other NPCs, you can buy them a (very specific) gift. After that, you can have what the kids call "Netflix & chill" with them if you are in a hotel room & have a condom in your inventory.
