Can you play the whole story co-op?

Quite the opposite. You can play none of the story co-op.

Co-op is for random quests to get other rewards.

Unfortunately no, its strictly single player as far as I can tell.

The online element are for the MH style questing hub.

You can play all of the story mode bosses in co-op. BUT, not the story itself. Which honestly isn't all that bad.

That is disappointing to hear.

For better or worse, the story is likely only a small portion of the time you'll put into it. The real meat of the game comes afterwards, as you seek to level up your characters, fill out their masteries, get all of the best sigils, and much more. I've got over 100 hours in the game, and the story was less than 15 of them. And there's still so much more I want to improve and other characters I want to try.

It's a shame, because in the 2019 demo they showed four players playing through an entire quest together. I wish they had continued that design through launch.
