It is a grind fest that is what this is. But the fun part is, trying out different builds and sigils combinations with a load of characters. At least for me.
The variants of each boss you'll fight in the final difficulty are noticeably harder than they are when you first fight them.
For what it's worth I think the boss fights in this game are very fun, despite the monsters being reused. That together with how each character has a distinct playstyle has made this game very enjoyable for me.
The game also has a bit of loot to grind in the form of sigils too. Tinkering with those to minmax a particular character has a good amount of depth to it.

The main problem with Relink's endgame is that fighting against a single boss moving around in an arena - which is most of the quests - eventually becomes a little boring and samey, since you just chase him around and block attacks. The story boss fights that have more original stuff going on, like the earth giant and the parts on him you break off, or the lava snake that sends lava waves towards different islands and raises/lowers the lava level, or the fight against Proto-Bahamut on the airship, etc, tend to be more refreshing, but there aren't many of them.
If we're counting bosses by pure unique model I think theres around 18 boss including mini bosses and extremely gimick fights. You'll end up fighting a lot recycled boss, different bosses put in the same arena or just straight up a stronger version of a nearly identical boss.
by that ridiculous standard there is 1. but if thats how you want to categorize bosses monster hunter world with iceborn dlc has 1 and thats fatalis. even alatreon has a fire version and an ice version. you fight every other monster multiple times on different difficulties or in double quests or harder variations etc.

If we count azure rathalos, silver rathalos, dread king rathalos, and apex rathalos all of whome have less new move variety than the nihilias, why wouldn’t we count the nihillas
Oddly enough it still is very enjoyable and even after 70+ hours I'm not bored because there are 20 playable characters that play completely different and they have their own progession.
Do keep in mind this not really like monster hunter, bossfights are just that and you don't need to chase them around a map but there are other type of quests like defending some areas or time limited horde modes.
If you want monster hunter, try dragon's dogma if you haven't.
