If I can unlocked every trophy in the game, everyone can do it. But i can understand how this can make some people pissed. Especially these that are in the hurry to try another game.
Anyway, about what you say, what is the trick? I could say I'm a "dedicate fan" but there is a limit of four hours that per day that you can fish. In this time, I get between 12 and 16 fishes. 60 fishes in a day sounds impossible to me in these four hours as you can catch one fish each 15/20 minutes.
You have time for two fishing mini games in one day. They last for around 4 hours "ingame time" each. (one before lunch and one in the afternoon) Find the "small pond" fishing spot in Bailu and Niaowu (maybe you need to do a side quest to unlock them). Always get the cheapest fish rod to save more money. The moment you start fishing, start pulling back left and right... So when you catch a fish, you'll be as close to the shore as possible and save time. Throw again and repeat. I'm sure you can do 25-30 fish for one fishing session.
Shenmue 3 is 7/10 game. Good but needs more budget. Shenmue I and II are 9/10 or 10/10. Many things are better in the first games, but we got what we got. Shenmue IV will be better if it come out.
About the "Wild wild hoarder" achievement, I got it yesterday watching a guide from Shenmue Master, a video showing all the 191 herbs you need. Really useful
