We plan to release an update to Switch which will enable cross-play with them in the future.
If you want to play together before that. On steam you can switch to Nintendo-switch-crossplay branch which would downgrade the steam version to a version that's compatible with the steam version.
Please let me know if you need support on that :)

It would only modify our game.
You should enter the properties of our game on Steam. Then goes to Betas tab, and select the cross-platform-compatible branch. Example image below.

I've recently purchased 2 copies of this game for myself and my girlfriend (PC for me and the Nintendo Switch version for my girlfriend) We just tried to play multiplayer/ cross platform for the first time together and neither one of us can see each others sessions and we see completely different games lists to each other.
Is the game actually cross platform between the likes of PC and Switch? or is it "Cross Platform" to the same type of platforms, I.E. PC Steam to PC Xbox, Console Xbox to Console PS5 etc, as we've tried everything we can think of and nothing is working for us.
Because we couldn't yet manage to update the Nintendo Switch version, its version is incompatible with the current one in cross play.
There is a workaround. We made a special build of our game for Steam that is compatible with Nintendo Switch in multiplayer, but other than that it's similar to the 2020 version.
Right click the game on Steam, go to Properties, then select betas.
There, select Nintendo-switch-crossplay.
Steam would get that version and then you would connect to same lobby.
Downside is that the game would lack a few years of updates on PC, and online would mostly be empty depending on the time you join.
