So, it definitely looks a whole lot like Monkey Ball (good thing) but what's the feel like? Like, if I just got off a 30 hour binge of Monkeyball Deluxe for PS2, how difficult is it going to be to adapt to this one?

It feels basically identical. You will not have to adapt at all.

Also, I recommend playing either Super Monkey Ball 1 and 2 on GameCube, Super Monkey Ball Deluxe on the Xbox, or the hack Super Monkey Ball Deluxe in SMB2.
Super Monkey Ball Deluxe on the PS2 is the worst way to experience this content.

PS2 runs at 30 fps and has obnoxious load times between levels. The games run at 60 fps and load times are barely noticeable on the GameCube and Xbox.
Visuals are also downgraded a little (reflections removed from stages, lower quality textures, etc.), though this doesn't matter nearly as much as the framerate and load times.
