What I found was that the addition of a second floor crucified me with cleaning. And one stuff got dirty it was nigh-impossible to get things clean again. The only possibility I can think of that may get you back on track is to manually close the inn for a while until you're clean. Though I imagine you'll need substantial guldens first to cover your overheads.

Just wondering.. is your main hall at the bottom right of your configuration too ? I was just wonding if there may be some kind of ♥♥♥♥♥♥ up priority that start top left, and finishes bottom right ...
I kinda tried everything, and now it seems that a second room has been promoted to "let's be a dirty room" (my guest room....) does not seems to be that much of a big problem, exect the voice saying it's dirty ...
At this rate my only clean place will be my "worman dirty worker" room ... which is kind of .. funny ? ...
P much all workers can clean, too, so that helps.
Yup tried to play with the priorities a lot before posing here... nothing seems to work. Even tried to set the room as "private room" and back to "main hall" to see if it could fix it ... but nothing .....
I have 1 - 2 servants entirely dedicated to cleaning and set to max speed priority (they also have the speedy trait), along with 3 drudges who help in between with low cleaning priority. Rest of my servants are only serving the tables.
Sometimes when there's a monster rush or my cleaners are on break I usually close the inn to make sure no more guests enter. I also take advantage of this downtime and order stuff that I need and open again once it's clean/restocked. I still get spammed with poor service but I rarely notice any guest complaining about dirty rooms and instead get compliments about it's cleanliness and get fame points.
P.S Setting a room as a max priority for cleaning doesn't seem to work, so I don't bother with it. The AI only seem to get confused by it and wander around the inn aimlessly.
Yup I'm pretty sure there is a bug somewhere, that make the cleaning crew ignore some rooms. Hard to say what is the cause, ...
I've started a second "main halll" that seems to be okay for now ...
The dorm, the kitchen, etc. all would get cleaned regularly, but only AFTER pretty much everything else was clean, would they finally start sweeping the main hall. End result being that the main hall would end up pretty dirty, while everything else wouldn't.
My other concern is the rugs. They're just a muck-magnet...
When stove dirties floor with soot, employees are willing to clean it madly. However, if the stove is set too close to the wall or other objects, they sometimes can't reach the soot between them and the tasks to clean soot are left and piled up. The priority of these tasks seem to be higher than to clean rooms. So employees wouldn't' clean rooms such as main hall.
When I moved the stove in the middle of the kitchen, many employees rushed to the black soot. And they started to clean rooms well after they had finished cleaning the soot.
