I believe you first have to get rid of the other function set to V (which might not be possible until a while into the game - an oversight on my part). And no, the options are not saved between sessions as it was thought to be completed in one sitting.
I apologize for these shortcomings, and they will be looked over for the release of Chapter II.
I do not understand that. So I start the game, directly go to options, and only change W to V. That does not work. But you mean, I maybe have to wait some time before I am able to change the key settings?

I did not play part one yet, but have already wishlisted part two! I hope you find some time to manage these issues.
The reason you cannot change it to V specifically, is because another feature (that becomes available to you in the game) is set to it. Hence that keybinding is locked away until certain progress in the game.
Really sorry for this, like I said - it is an oversight on my part.
Anyway, I suggest to fix this issue by not hiding that special function that is triggered via V. Instead just name it with an unsuspicious name (e. g. action). So the game is not spoiled and the controls can be changed without strange behaviour.
As you see a controller is only partially supported, so maybe it does not work in the menu.
