How to get this? Under options I don't see anything related to changing color of pieces?

Hello, Gingergal!

You can change the skin (not the pieces) color in Options / Interface. If you complete a puzzle with each of the 5 skin colors, you'll get the achievement.

ah thanks, had it in my head that it was the jigsaw pieces not the overlay/backdrop color that changed color.
