not sure if that setting is turned on, I don't really touch the game settings when making a new save.
There is a "Hold until full" option on the top right of the screen when the cart/train is selected. For faster onloading you need to use a train station.
I already overhauled the carts to just be caravans, but I suppose I'll have to tinker with it later.
Maybe you were expecting the minecart to reverse direction, if the track ended at the load point? If that's the case then that's the issue, the minecart is expecting to keep traveling in the same direction down the track. You would need to make a rail loop for the cart to reverse.
The trailer for the game of the store page has an instance where a minecart carries a log on a one way track. Maybe that is adding to the confusion of how they work because it leaves the impression that it can reverse.

I, too, had trouble setting up and understanding why my minecarts wouldn't automatically turn back at loader/unload points.
In any case at least pusher block forces them to turn around.
