Northland Hardcore Mechanics
I've attempted Northland Hardcore several times at several different locations. I always run into the same problem that doesn't seem fair. As I approach or pass the Chalcolithic things change dramatically. When it comes time to harvest only a few souls are interested in harvesting. I have sickles made for every adult. I try to limit or cancel any new projects near harvest time. The harvest fields are the only things set to high priority. Previously, in non-hardcore games I could get up to 75% adults involved in the harvest and be done quickly. Any thoughts or tips?

Stop giving any new tasks when the season is at about 2/3 to 3/4 before the harvesting season. This allows your workers to finish the current tasks and rest and recover.

They are then able to work with full need bars, which means they will quickly harvest everything.

If you just canceling tasks directly when the harvest has already started, your people are still running around hungry, thirsty, tired or demoralized.

Prioritisation isn't going to help much. Harvesting is already a high priority task.
...or some are still finishing up some things which don't show in the workload or tasks, even though main tasks aren't assigned.

Thanks, I have been slowly coming to that realization. However, along with the first problem is the disappearance of reasonably available hunting. Not just an occasional scarcity but regular pattern. I almost always have to send my people on long treks for hunts that end up with people trying to come back or bring back food during the fall. The local large game essentially disappears (even though I often place my village close to a watering hole). Very frustrating!

I've noticed that in most of my games, when I'm able to plant crops and/or have livestock so that I'm no longer hunting very much, then wildlife start frequenting your area more once again.
Hunting will thin out the amount of animals you have around you.

Animal packs seem to spawn in randomly all over the map. If you kill a group near your base, chances are good they will respawn somewhere else.

So over time less and less animals will be next to your settlement and you have to move further.

I partially agree. I have been playing many years. In non-hardcore games I have noticed an increasing number of lean years as time goes by but I still had many good hunting years
