Tree-type Exclusion
Is there a way to exclude certain trees from being chopped down in a work zone? I don't want to have to micromanage manually selecting trees to harvest, nor do I want to have to go through a work area and manually deselect any fruit or tannin trees.

Not really no.
I usually leave clumps of fruit trees out of the chopping zones and add a tanning workzone on top of them.

On the plus side, you only have to set all that up once per game.

I just chop them all down :) fruit trees don't provide that much food and I really only get use of them early on, but yea tannin trees suck cause when I need them I have to go a bit aways for it. I do wish you could plant tannin trees.

I guess I'll have to be a bit more careful of how I set up my zones. It would be nice if there was an option to uncheck certain types of trees in the zone.

Being able to exclude tannin-producing trees from logging work zones is one thing I've always thought should be something more easily done, since it would make sense for your people to value those particular trees as something more than just firewood or building materials... Maybe in DoM 2. :)

I find it does pay in the long run to avoid chopping down any of those particular trees if you can possibly help it, and simply build around them as you grow your village. Where there's a small cluster of them fairly close to each other, perhaps plan to use that area more for wood, stone & charcoal piles, or small productions like drying or tanning skins, charcoal pits, etc. - i.e. stuff that can be easily slotted amongst the trees, rather than simply chop them all.

The end result may then look something like this, with a reasonable amount of tannin able to be gathered from within or on the outskirts of your settlement, making it less of a chore to gather enough to meet your annual needs:

The only way I have found to only cut a certain type of tree is to double click a tree in the area where you want to cut down trees, this will highlight a number of trees, 10 to 20 depending on density.
You then shift + left click the trees you do not want to cut and press cut down button.

But don't you have to click on each tree in the selection individually to see what kind of tree it is, thereby canceling your group selection?

Nice looking settlement! With the hills and such I would have been like nope, not building there! lol. But you made it work.

I'm surprised your workload is so high though. With that population I'd rarely be over 50%

I do much more compact settlements and pretty much looks ugly lol. Unfortunately this is only screen shot I have since I've changed computers. I thought I would have had more in my online library.

Heh, yeah, that particular piccy is about three years old now (I recall being quite impressed that I'd managed to keep my workload below 100% at the very beginning of harvest, given that I was still massively over-producing in almost every way! lol) - I don't have many in my library either but that seemed best to illustrate my point for this particular topic.

I do tend to build for the aesthetics of the thing, I must admit. The game punishes you in subtle (and probably unintended) ways for having a fully-fortified settlement, but that's generally how they did it back then so I just have to do it the 'realistic' way, too (where I bother to build any fortifications at all, that is - I tend to go for one extreme or the other!). Besides, it makes achieving & maintaining a high level of efficiency even more challenging, and that's actually fun for me... Each to their own, I guess. :D

you have to shift + click if you click only the selection will disappear.
Each type of tree has it's own logo.
