Crops have an automatic hidden priority. So no need to put extra on top of that.
Anyway, when the season changes harvesting/planting crops becomes no1 priority. For planting you should get plenty of plows once you unlock them, and for harvesting you need to make sure all adults can grab a sickle so all of them can work on them. And that's about it.
You can also leave crop fields outside of your village walls as raiders prioritize gates/towers/villagers anyway.
I.e.:
- worker goes to harvest
- harvest 1x straw
- pickup the straw and
- goes to build the defense tower (normal prio) instead of keep harvesting (harvest is high prio)
- until worker is back, winter comes -- BOOM!, no more straws with 60% unharvested
VERY frustrating!
What's even weird is that for SOME scenarios this is actually working fine.
Maybe there are some parameters there which affects AI's logic?
Does anyone knows?

Personally, I have never had any problem with harvest as long as I can keep the workload during harvest lower than 100% (much prefer 80% or lower). Make sure that I have enough scythe (default 75%A), and near by storage spaces.
