What do raiders do?
So, on my quest for 150, I've had to put some housing and fields outside of my palisaides.

During a raider attack, I usually get my people outside the wall and meet them before they reach the village.

Except this time where I didn't do that and the raiders just balled up outside the wall. After a few seconds, they ran past the field, ran past the houses, ran past the megaliths to attack my walls and my guard towers.

So, what do they actually attack? What happens if I didn't bother to have walls? Are there any structures they go after or do they just mow down residents?

They kill and pillage. They seem to prioritize attacking defensive structures, especially towers, and people but if you have other structures out there with no defensive structures or people around they will destroy them. Or at least they used to. I don't know if their behavior has been changed. They don't seem to be interested in burial mounds and totems so they might be ignoring all spiritual and funerary structures and are going after houses and economic buildings.

raiders will kill villagers, animals, towers, walls, stables, houses..

in normal difficulty, raiders are not very strong. walls aren't really needed if you have a high population, then just place down some gates as your villagers will go to the gates when you sound the alarm.

it is good to keep the fields outside the wall as you will need tons of barley, but pulse vegetables are planted in winter, so do not place those too far away or the cold can be a problem.

in hardcore difficulty the raiders are far more deadly, and can kill your progress. the trick is to set up a double wall. as raiders attack range is 5 and towers attack range is 8. so set towers behind an inner wall, and then make a second exterior wall that has a gap of 5 tiles between the inner and outer walls.

i am fine with placing housing and haystacks in this gap between the walls. they should be fairly safe if you have a large population that can swiftly kill off the raiders.

the dumb part is the villagers will gather at the gate of the outer wall instead of the gate of the inner wall...so some casualties are to be expected. i do wish the game would let us toggle to disable gathering at the outer gates.

In hardcore vanilla the highest raiders numbers is below 50, that is if you reach or you can reach up to 200 population as the game was initially programmed. That is 200/10= 20 extra raiders plus 28 maximum raiders in Iron Age. If you don’t reach population to produce extra raiders per population to offset the minimum 25 raiders then it will stay at 25.

You don’t need 2 gates, a stone (hard to have in the long run) wall in the inner and palisades (logs are infinite in numbers) in the outer wall is just fine. No casualties if you set your defenses properly with complete weapons (range units occupied the towers and platforms) with a decent amount of melee units to begin attacking once’s the raiders are attacking and your melee units are within the range units support.

Here is my last gane on hardcore on EverWinter mod with heavy raiders. 30 wolves raiders or equal number of human raiders can hardly breach or extract casualties on my defenders despite having it during blizzards.

EverWinter mod is very fun but the toughest I’ve ever played. It’s noticeable that I can’t stabilize my domestic animals because early winter devastates my grains harvest/straw that I have to slaughter most of them. Contrary to othe tough games but I normally have my 30-50 each of my domestic animals before having 200 population. Meats from domestic animals will provide you with tremendous amount of meat as well as leather that is still valuable for trading in the Iron Age.

technically, you wouldn't need an entire 2nd interior wall. if you just place the towers in far enough away from the outer wall so that the raiders cannot reach the towers from outside but the towers can reach the raiders.

here's screenshots of 2 different playthroughs with and without an interior wall...
