How do I hunt and get skin?
All the wild animals is a little distance from my village, if I set up a hunting zone where all the animals are my villagers die to hunger or dehydration when they venture out on hunting missions. So how do I get raw skin?

hunt manually: take 2-3 people (hold down 'h' before selecting to get only the ones with hunting tools) and then right click on animal

Use the tab key for "primal vision" to be sure you aren't attacking something that will eat your lunch.

Patience, fish first of all to get food and watch the banks for when you fish them all away and keep moving it so there is always fish, you might even want 2-3 fishing areas to build a surplus of fish to begin. Make sure you build the drying racks and the food drier before any other techs and a storage tent, these 3 things are VITAL for sustained food that won't spoil so fast.

While you do all of this keep using TAB primal to look around for close by animals or just set up a hunting area right in the middle of your small village but hit C till it is expanded as large as it will go. Your people will only hunt things that can't fight back with an area like this. Deer, Ibex, Megalos etc. For bigger game do as suggested above, hold H and drag select all members of your tribe since it's probably still small and get at least 3 hunters and only hunt something close enough you won't starve going back and forth to kill. But keep in mind that manually hunting the animal(s) doesn't imply that your villagers will actually gather the meat+bone+skin and take it back to the village. That is a separate activity, related to... day/night cycle, sightseeing river/lake mermaids and so on and so forth.

Everything is falling apart at the scene here, it was a brutally cold winter and I cant get get leather for clothes, my pop just went from 77 to 63 in 1 winter, I dont think I'll survive the next winter if I can not get clothings.
I tried to take 4 villagers manually and direct them to the animals, I managed to get 2 kills on 2 bisons then my villagers got dehydrated, only 2 made it back alive to drink. My town have had no troubles until now, everything is stopping up and falling apart like a domino effect due to the lack of leather.

Alot of good tips here, thank you! But I do not need food, I got alot of farms. Food is not an issue but clothings.
I have eradicated all wildlife around my medium size town a long time ago, so they have to venture far to get to the remaining animals. Too far for my hunters to survive even when I direct them manually.

But I dont have a choice or everyone will end up freezing to death since I cant get cloth if I dont.

This is just too much

I suggest micro-management to solve your problem. Gather a decent number of good condition hunters, force each to pick up some water/food (annoying), and send them as a group to hunt. When you get something, force a few to gather the skins and send them back to camp. Repeat.

You can also scum-save traders if the inventory doesn't have clothing or the inputs you need. When the trader arrives, quicksave - if they don't have what you want, reload and maybe you get better stock.

Also, ensure your limits are set so the village doesn't produce any leather, only dried skin

Watch out for predators around your village. Predators can stop animal to migrate around your village. Kill them first. Do not venture too far away to hunt in the winter

I actually keep production of tools other than scythe down very low for this reason as axes, picks, and fishing tools often take up the place of the knife leaving your home villagers to shake their heads in despair at who let -those guys- go hunting again.

The only good thing is that when you've got carts, it's actually quite useful to have them trek from the village with a knife in hand, and cart the entire butchered remnants back home in one trip rather than have your toddlers go on an epic voyage through lions and tigers and bears (oh my) just to pick up a bone!

Sledges are also good for this if you are still too primitive to have discovered the wheel. :)
