While you do all of this keep using TAB primal to look around for close by animals or just set up a hunting area right in the middle of your small village but hit C till it is expanded as large as it will go. Your people will only hunt things that can't fight back with an area like this. Deer, Ibex, Megalos etc. For bigger game do as suggested above, hold H and drag select all members of your tribe since it's probably still small and get at least 3 hunters and only hunt something close enough you won't starve going back and forth to kill. I tried to take 4 villagers manually and direct them to the animals, I managed to get 2 kills on 2 bisons then my villagers got dehydrated, only 2 made it back alive to drink. My town have had no troubles until now, everything is stopping up and falling apart like a domino effect due to the lack of leather.

Alot of good tips here, thank you! But I do not need food, I got alot of farms. Food is not an issue but clothings.
I have eradicated all wildlife around my medium size town a long time ago, so they have to venture far to get to the remaining animals. Too far for my hunters to survive even when I direct them manually.
But I dont have a choice or everyone will end up freezing to death since I cant get cloth if I dont.
This is just too much
You can also scum-save traders if the inventory doesn't have clothing or the inputs you need. When the trader arrives, quicksave - if they don't have what you want, reload and maybe you get better stock.
Also, ensure your limits are set so the village doesn't produce any leather, only dried skin
I actually keep production of tools other than scythe down very low for this reason as axes, picks, and fishing tools often take up the place of the knife leaving your home villagers to shake their heads in despair at who let -those guys- go hunting again.
The only good thing is that when you've got carts, it's actually quite useful to have them trek from the village with a knife in hand, and cart the entire butchered remnants back home in one trip rather than have your toddlers go on an epic voyage through lions and tigers and bears (oh my) just to pick up a bone!
