There must be animals killed for food every day, that have one disease or another - some with diseases that might kill them. You'd never ever know - they aren't tested for every disease as they enter the slaughter house.
In our modern day we have a far larger understanding of bacteria than in ancient times. They wouldn't know what the f*#k bacteria is let alone understanding it.
As previous post have stated, likely all they would see in a dead animal is - " an all you can eat buffet"
