why are the controls so odd
i've played a few stages and i am really struggling with the controls, mainly turning. why isn't it just. the left stick controls where i roll, the right moves the camera. why do i hold up or down to turn? i'm just so confused and keep bumping into stuff cuz i can't turn how i want

Are you using normal or simple controls?

Not necessary. But with simple controls, you can turn any direction just with the left stick, but the right stick doesn't change the camera as freely as you probably want. Either way, you should give it a try; you can change at the "bird". :katamari_prince:

okay so i just tried it and it's kinda nice but still... why is moving the prince right up?? and left down? and i can't even turn as fast as i can with standard controls? i guess i'll just use the default ones but it's just so baffling to me why the controls are so weird and bad even on "simple" controls + limiting your options

Are you using a gamepad or a keyboard? It's a PS2 game originally, so using a controller is preferred, try it, it'll feel a lot more intuitive.

whoever decided you needed to hit multiple button combos to move around was smoking crack

Normal controls are weird, true.
But simple controls are worse, lol.

when you think about it like you are pushing a ball it all makes sense.

left stick is left hand right stick is right hand.

you turn with BOTH stick, one way is left up right down, the other direction is left down right up.

cause, you are pushing a pall.

think about it like pushing a shopping cart. when you put your foot on the back left wheel while pushing, it turns left. same as in game. when the left stops pushing, you turn left.

when the right stops pushing, you turn right.

once you realize there is a soft turn and a hard turn and that you can drift, the katamari is essentially an omnidirectional wheel.

you can go in diaganal also. and you can more or less drift, by having a consistent input you can essentially push the katamari in a circle, its hard to do, but once you learn that level of control the controls become second nature.
Beatles points are all correct. Some other things to consider:
On the default controls, pull the triggers to flip 180*. This is way easier than fiddling around trying to turn sometimes.
You go faster going forward than left/right/backwards, so try to line yourself up and roll forwards as much as possible.

If you really need help visualising it, close your eyes and imagine your two hands are on top of a ball. You want to go forward, so both hands move forward. you want to turn left, so you move your left hand down and push your right hand forward, etc.

this, changing directions mid roll is also how you get some really steezy drifts.

The controls are "like that" because Katamari is "like that."
Nothing wrong with simple controls, but twin-sticks will offer more mobility overall with practice.

Basically Katamari was designed by a studio artist with a unique style, not a games-guy. Namco let him design a budget title and he came back with "Left and Right Sticks are your hands on the Katamari. Roll up smaller things. Get bigger."
This is how it is and how it should be, hoenstly just git gud
