It's definitely possible, you just need to optimize your route. Get to the 45cm gate as fast as you can, then work on sucking up everything beyond it on the lower area. The trick is that there are a lot of tight spaces which you can't fit into once you get bigger, so you have to optimize your route.
There are also a bunch of stuff at places you wouldn't think of. Like you can go back up the road and get the guardrails, a few shrubs and 2-3 schoolchildren. You can get on the rooftops from an enclave where green fences act as ground (or as ceiling for the market area) - there's a bunch of stuff there, including two dudes stuck in pipes. At 2m75cm you can also start getting some of the traffic signs you bounced off of for the entire level. Also don't forget to not let anything run away after you bash them.
I just played it and got 2m79cm after about four tries.
The physics feel just like the PS2 game to me. Maybe you are confusing it with We Love Katamari which considerably dumbed things down, to the point you couldn't even get stuck anywhere.
