Eagle Prospector is just all all around better (unless you really want to use a grabber, I guess).
Titan has 3 times the cargo bay plus up to six containers and great flexibilty in how you want to split the 8 hardpoints between containers, drones launchers and weapons. How exactly is that "not better"?
this game is one of the rare gems with a lot of options how to play.
If i find a derelict, i cannot go back to the station and come back with a different ship to recover it (99% sure). I need to have the Manipulator at all times.
Actually I think they should add the ability to mark derelicts, or any disabled ships, so i can go to station and come back to collect the ship later. That would help.
you need crew with high level, than some crew members try to bootup the ship, the better the level the more chance to capture the ship.
I have tried that a few times but they always get injured and drift away, so i have to grab it with the Manipulator anyway. Or destroy it if i dont have the manipulator.

i can not confirm this, in most cases my max level crew capture the ship, i have rarely exploding ships and sometimes they come back with the info the ship is dead.
EDIT: Just double checked, and there is a slight skew towards a successful salvage, but it's not by much (52.6% chance success to 47.3% chance fail), however it's a relation to how the chances are weighted rather than crew skill
the issue you're facing is that you're looking for a direct upgrade, which kinda defeats the purpose as any new ship or variant is intended to be a sidegrade, rather than a direct upgrade. the K37 is a jack-of-all-trades-master-of-none ship, as it can do pretty much anything, but other ships will do better at specific tasks but fail exorbitantly in others. (i.e. cothons excel at mining and storing ore with drones and an MPU, but cannot easily chase after stuff or collect ships)
if you're looking for a good replacement for the K37, any of the other K37 variants are decently good depending on the job (KTA24 for salvage and combat, KX37 for extended cargo and processed ore holds for mining, KR37 for chasing objects with mikes and combat), or like you say the vulture, which is also a good one to go for. it's exceptionally good for the k37 job, which is why it was given the crew penalty (which isn't all that hard to counter in actuality, a drink from the space bar completely nullifies it for a couple of dives), and the thruster layout can be a little bit more finnicky, but it def works as a good sidegrade. it's one of my two goto ships for the K37 job, alongside the EIME for it's thruster placement and insane power generation
