It's been a while since I've played, but wouldn't you still need a keyboard to type in words for the search engine? How does this work on consoles?

It uses an in-game on-screen keyboard.

Here's a video going over the different control options, specifically on Switch but other than touch and motion support this pretty much applies to all consoles and PC :)
