As the game is set in the real world, there is no way to turn back time. Puzzles can be reset, but that's extradiegetic (not part of the story/world).
Terminals more similar to the ones from Talos 1 do exist, but they're not the standard, as it would make no sense for an advanced robot society to use them (except for aesthetic purposes).
I'm totally broken to hear that but that's understandable

Oh okay, I just though it was fun to follow the advancement of the reset etc... (in a gameplay view) but that make sense, that's just a little animation that I'll miss

YES, as long as I see the character typing smoothly as in the 1st I'm happy, even if it's true that there is maybe no sense, even if, on the one hand, it's still basic but useful when you need a terminal, at least from my point of view (I was talking about terminals where you just put your hand down)
I'm sad to hear the budget is missing for a FR dubbing. It was a masterpiece in TTP1. Is it possible to plan this with the revenues of the game's solds since it's well appreciated by the community ?
Anyway, the EN voices are very nice, they are well associated with NPC's characters.
Personally, I found the voice acting in TTP2 to be too intrusive and annoying. A lot of them just sound like they're reading from the page, and are not good actors. However, a few stand out. Lucy Montgomery who plays Pandora is excellent. This is a famous clip of hers.
