A new version comes out every 3 years based on the current version of Pro.
LTSC only updates the security and nothing else, which means updates won't break anything.
(Win10 Home and Pro updates used to be infamous for breaking things, and I don't know if this has changed in the last few years)
The only other differences are the lack of bloatware (like Candy crush and adverts), reduced telemetry, and lack of a few minor features like Cortana.
It works 99% of the time with no issues, and when there is one there is usually a way to fix it.
Normally new games just need updated drivers, but in this rare instance the game actually needs an update that was introduced between the 2018 and 2021 versions of LTSC, and I'm on the 2018 version. This is the first time this has been an issue for me.
I don't know why certain people are being so rude about it either, though.
Never had Candy Crush pre-installed on my Windows.
It turns out I wasn't entirely correct, and it appears to run on the latest version of it.

Unsupported doesn't mean it won't run.
It's a bit of a pain in the ass but things do run a bit better.
You also get access to the HAGS options, which either helps games with smoother framerates or completely screws them up. I leave it turned off.
Considering how many games are being developed on Unreal Engine 5, I suspect you will find none of them work.
As for stability, I updated to Windows 11 when it launched and have kept updated, not had any issues with updates.
Sure LTSC will have less chance of update issues, at the cost of more chance of games not working as they use newer and newer OS features.
LTSC is for work computers where you need to guarantee no issues, not gaming.
Fortunately LTSC 2021 apparently runs the game just fine unlike the 2018 version, so I simply need to get a new iso through my company after the weekend and update it.
LTSC runs just fine 99% of the time, as very few programs rely on the latest feature updates.
You want some unexpected problems - go ahead. The ultimate question - what is worse, tinkering with bad update (which happens super rarely if you don't use outdated software/device/driver), or tinkering with games which doesn't work properly and was never tested on your configuration.

Windows has update rollback feature from the times of XP (if I am not mistaken). I don't remember such cases, when update was causing so much damage, that Windows can't roll it back and complete reinstall was required.
