You can use shields.
I don't know about using Ankh jewels *during* the fight itself (they're categorized as subweapons even though they're obviously meant to be usable items). I assume that wouldn't count against you, but I wouldn't risk it seeing how there's no point.
You can use an Ankh Jewel. I accidently used one fighting Echidna and still got the achievement at the end of the game.
As in the last game, it only counts it if you do damage with the subweapon. Thus, you can use your shield, or damage yourself with caltrops for iframes.
You're not very lucky, bosses got buffed really hard in the last week or two; I was able to get that achievement out of the way when the game balance was really off.
Not true. In this game just as in the last game you don't get the achievement if you use any offensive sub-weapons during a guardian fight at all, no matter what they hit and even if they don't hit anything at all. So no, no caltrop damage abuse possible.
