Try going out of render distance and wait for half an hour orso so that the treasury resets, then kill the guardians and hope that you get them all that time.
So some of the maps are just bugged and will never work, but most times I leave the area for at least 5 minutes (not sure how long is needed) and it resets the map. I then go back and try again. It almost always works the 2nd time. If not, oh well, do a different one.
I don't shoot for doing 100% of the maps. I skip the ones my tiger or bear can not get to. I skip ones that seem to be bugged out (although this happens way less often than having it be inaccesable).
For me, half the fun is finding it. So I don't let stuff like this ruin the fun.
I don't fight them directly. I use a bear or tiger to fight them. The main problem I have is that the tiger or bear doesn't have enough melee to kill them before they go under the ground. Because of that, I stick to maps less than about level 12.
When I do die, it is usually one of two things. Some other wild creature decides to join the fight. I had a lion jump me while almost done killing the SotD. It drags me off my tiger and kills me. My tiger finishes off the SotD and the lion. I have to travel back on foot and get my loot bag and also the treasure. The other way I die is it is too hot, so I'm only wearing cloth armor. I get in too close and one of the warriors gets in a few hits on me while I'm on the back of the bear or tiger. I die before I notice I'm getting hit and move back.
Can't tell you how many t-maps I thrown on the ground from aggravation for this reason and others.. like the spawn being on top of a huge, very tall mountain or being in the middle of a player puckle infested base lol (if you play on a pvp server)
