From what i've heard before release, melons are illegal in MythOS, unsure why, maybe their code is broken

From what I can figure, my guess is that the code of melons has the ability to glitch nullmen and give them sentience.

melons are possibly linked to the void or linked to ford seeing as nulls become more like ford the more they eat M E L O N

If a melon broke its a "inoperable geometry". But i don't know more. Also they created their own fake-"Melon Belly" to drink it because the normal Melon Belly is an acid or something like that (look at the barrels, there is a big X and the hint:"Not suitable for drinking")

The melons were added, so that people can ask what is with the melons.

There was a game called "Facade" which was a simulator of you trying to defuse (or ruin) a tense relationship between two of your friends. For reasons unknown saying "melon" in any capacity would have the owner kick you out of the apartment and you'd lose the game.

I don't think this is a connection at all but there are melons everywhere and the AI like them in contrast to facade.

It's a meme and it is part of the story. The story is told in the environment and what i've picked up on it is basically a blood substitute the null men grow because their orange blood is ♥♥♥♥♥♥♥ expensive, although it might have a fairly negative side effect upon them based on the green null men we see around them later in the game
