How do I disable the Shift+Tab Steam shortcut?
Many times I have failed my teammates because of that shortcut.

You can change the shortcut keys in Steam Settings > In-Game > Overlay shortcut key(s). That will change which buttons you use to open the overlay in all Steam games.

You might still need the overlay for stuff in-game, but if you want to disable it altogether while playing TABG, you can right-click on the game in your Steam Library > Properties > Turn off "enable the Steam overlay while in-game".
