Nope, it wasn't "always" like that, i have collected water like that many times before.
Also this is stupid and totally unrealistic.
Also, i can't cook water in bidon :/
The steel bidon hold 100 water. Found at the over turnd jeep.

And you can't even use flask (with fresh water) to fill water into bowl to cook a soup. It HAS TO BE dirty water.

Alternatively (and that might be what you remembered), you can open your backpack, _drop_ a coconut bowl into dirty water, pick it up again, and place it on the ground (or on a campfire spot), all while keeping the backpack open. The bowl will retain the water. You can also click on the bowl, move it around on the ground, and drag it across farther distances if you want to, but that is very cumbersome. But if you put it into the backpack, it will automatically empty itself.
My guess is that you perhaps don't remember your previous practice in all its detail, and forgot to keep your backpack open. Without the backpack open, none of the above will work, and you'll just "attack" the bowl if you click on it while wielding a weapon. It's a _very_ counter-intuitive system, so it's easy to misremember things about it.
You can absolutely fill fresh water from a bidon into a bowl. You just cannot _mix_ water of different types (which is counter-intuitive as well, a better solution would be to just add the water, but keep it dirty).

Also, i cannot use flask with water to fill a bowl.
Maybe im doing it wrong?
I put bowl on to fireplace (one of circle), then i try to pick up flask/coconut bidon and move it over a bowl. Nothing happens - no icon to fill bowl.
Even if bowl is on the ground i cannot fill it. It neither fills from rain nor from any water source (including mud cleaner).
See yourself. Also, before this, i've tried to fill coconut bowl from dirty water source. No effect.

Eat the orange capped mushroom found on logs to drink dirty water and prevent parasires, also the blue mushrooms on the brazilian nut trees,
use G to throw a stone or spear at coconuts high in the tree.
It doesn't look like you're doing anything wrong. Looks more like a bug to me.
Is this an old savegame that you're trying to continue? Also, did you use mods with the game that may have become outdated?
Here's how it looks for me - I put two coconut bowls from my backpack on the ground, then clicked on a coconut bidon with clean water and started dragging it. You can see that the icons for "fill container" appear on both bowls.

Could you try to start a new game on an unmodded installation of the game and check if the problem still occurs for you?
After uninstalling and reinstalling to another, different location, all my water problems are gone.
Sorry for my mistake.
