Edit: also as an added tip because I struggled with jaguars at first myself, if you throw your spear at them aiming for the head. It pretty much always one-shots them, as long as you actually hit them in the head.
Collectible, like rocks and sticks, will depsawn after a while if nor placed in a storage yes.
Same thing for tools/weapon you let on the ground, they will loose % time to time untill they despawn.
For tool/weapon recepies, you have to find it by yourself by experimenting, or you can sometimes find them already crafted in the world, your character will then write them in the book.
For big structures, like the tool rack, you have to find them already built in a native camp to learn how to make them. Some other structures auto unlock themselve when you collect their ingredient for the first time, like all the mud shematics when you collect mud in a river for the first time.
And about Jaguar, think about head shot with an arrow or a throwed spear.
You can combine a banana leaf + 2 ropes + 3 sticks (or bones) to make an armor.
