How does the stamina system work?
Im constantly running out of max stamina even after sleeping. I sleep then walk around doing stuff around camp for 10 minutes and im on the verge of passing out already.

Does the time of day, backpack weight, nutrition meters affect max stamina and if so, how?

Parasites maybe? They will drain you.

If you can see a stomach icon and a number next to it then you
need to eat the orange shrooms growing on logs. (the number is how many parasites you have )

The stamina has a constant depletion rate; whether you're running or doing stuff during night time.

also if you are not eating the right foods can also hinder your stamina. a good hearty meal will fill it all up. the more work you do, the more food you need to eat cause energy

. Lol, I have more discipline in this game than in real life.

Up in the morning at 5 or 6am Eat a full breakfast, drink plenty of water and go for a 15 mile run
around a jungle :-)

You should always keep your macroelements up. When the watch icon is showing above your health bar it indicates that one or more macroelements are low and you need to eat. With low macroelemts your energy will deplete faster, the more elements are low the faster is energy depletion. Also water/food depletion is slightly higher when you are active but not by much.
Edit: Personally I avoid running as much as possible because of higher chance of running into snake/natives/cats and the noticable higher water consumption (King of the Jungle difficulty)

Are you sure about that? Last time i checked energy depletion rate was unchanging.

I did a couple of test with all bars completely filled, standing still vs running all the time and there is a slight but noticable difference.

you do burn through carbs faster when doing high energy draining tasks i know that
