Bleed out seems to happen regardless if using a spear or bow and arrows.
I noticed that a head shot causes instant death (almost always).
It happened to me, that one animal ran away after I hit it with an arrow and I tried to follow, but I couldn't and I lost it's trace.
So I decided to search for some fruit and as I roamed through the green, the same animal came by and collapsed directly in front of my feet. That was pure luck, I would never had find it.
Edit: typos.
Wrong.
With an higher weapon skill they bleed out from one single arrow. Even a headshot with an arrow causes instant death. So the bow isn't useless at all, it just needs time and patience to increase your skill with it. My skill is about 50 or a little higher and my prey is dead in one moment if I manage to do a headshot. If not, they only run for a short time and collaps pretty soon.
There actually is one - kinda...
Travel to the abandoned dock (where you find blueprint for water filter and spearfish trap). Cross the river and on the opposite bank you'll find a turtle. You can't kill a turtle, you can't break through it's shell with any of your weapons. But the turtle will stop wandering. So you can shoot at the turtle as often as you like. Make sure you don't have a knife with you otherwise you might harvest the turtle by accident if you pick up your arrows or your spear.
