So in your opinion, you should pick up coconut, drink the milk, harvest it and the shells should go straight to the next backpack tab and coconut flesh automatically harvested? Harvesting the flesh from coconut is additional feature, like hitting green coconut to get brown one.
Pun intended.
The mechanics here is simple and pretty straight forward.
We can choose to remove the green shell first then pickup from there. Drink harvest etc.
You don't need to harvest them twice. Once you have the coconut halfs in your inventory, you can just eat them (no need to harvest again) and only the empty shells will remain. You can use those for collecting water or just destroy them.
Before you complain about bad mechanics I'd rather suggest that you try to open your eyes and figure out how things work in this game.
Don't blame the game or even the devs for your lack of brain.
