The hardest timing to get 5 star in my opinion is when your monster around lv 16 and before lv 20, once your monster get that lv 20 power spike, or getting dark/light shift in the end game, thing become very easy.
they shouldn't lower the difficulty of 5 star, but rather have a difficulty option right at the start (easy-normal-hard-etc) , for now once you know the way around, getting 5 star champion isn't too hard, if you make it easier then it just make a non-challenging gameplay in overall.
Yeah I actually managed to get most of them today, I haven't yet reached Shifting, but I figured out some good combos.

Lowering that difficulty seems silly to me as long as you understand how the "overkill" system works.
Higher Party HP = Better Score
Fewer Turns = Better Score - i think after turn 3 this drops off hard from what i've read.
More Party Buffs = Better Socre
More Enemy Debuffs = Better Score
You don't even have to exploit all of these to maximize your score. in my main run, i got the Qilin first try with a score around 14k, and most of these fights i was 4* on my first try.
Dark/Light shifts are awesome, but not at all mandatory for anything currently in the early access release. (though i imagine they will be during the next update.)
D-Magmapillar (sustain3 + shield4, it's very important to finish the fight full life)
Mad Eye (I reset his skills to skip the aoe and focus on all single attacks 4, putting all possible debuffs on the enemy)
then D-Catzerker (slash, slash, slash ... with 200% crit damage)
