Seizure Warning Crash Resolution

It seems this has been an issue since the game has launched, and after doing much research, I found out probably the simplest way to solve this issue. If your game freezes immediately at launch at the Seizure Warning screen, you can actually manually delete the warning from the game files.
It should be under this directory in your Steam games library on a Windows PC:

steamapps\common\Assassins Creed Odyssey\videos\en

You can just cut and paste the epilepsy warning onto your desktop to see if that was the issue. Your game can run without it anyway, so if you just want to skip that screen, then leave it out. If it still crashes for you, then maybe it's another issue than the Warning screen file.
