This one is not an AC game actually, it's more like a mmorpg game (content-wise) but without other players. A typical soulless service game with a lot of grinding and AI generated quests. But it was quite entertaining though, except the cringiest writing I've ever seen.
There is the whole storyline in the present that has been ongoing since AC 1 but you really can just ignore most of it and its maybe 5% of the entire game.
For the rest its a really good and fun open world RPG in the vein of games like Witcher 3 with a TON of content.
I disagree with the poster above me about it being soulless, i thought it had a pretty good story and quest design. Of course if you go for every single side activity in the world you will burn out fast but thats not the way to play the game anyway.
I put a good 130 hours into the game (with the DLC) and still consider it one of my favorite games of the last 10 years.
Its like the Assassins Creed game for people who dont like Assassins Creed.
AC games, like Dark Souls, is best experienced with a controller. I highly suggest you get one, even if it's a cheap crappy controller, you'll have more enjoyment than on mkb.
A good place to continue is Assassin's Creed II. If you like it you can continue Ezio's story.
I agree with this poster. It's just that if you play Odyssey now you may not like the older ones as much after seeing the improvements on the series made here. Story wise you can really play any of them in any order.
I would also recommend going back to Black Flag with a controller. That game's pirate experience is fantastic, especially the ship combat.

You can change key binding from the default, so you have easier access to keys that needs to be in reach of one hand during combat, and other keys that isn't that important further away.
I play with a Razer Naga mouse and 12 thumb keys, so that helps to assign keys. Any MMO mouse that have more keys for thumb then 2 is probably going to help you here.
AC games like Odyssey, Origins, Mirage and Valhalla you can set how sensitive aiming should be, so you don't need to have different DPI for aiming, if you don't want to have to assign a key just for changing between low and high DPI.

I hadn't heard of that. Do you have any specific system for mapping buttons that you think is superior to most?
It is most likely an Asus mouse which make use of ROG for their gaming equipment as a brand.

As for "mapping buttons" it will always depend on your how large your hands are to cover keyboard or mouse position for where you physically have those keys you want to reach. It is useless to give a suggestion for where one might have small hands and even have issues to move fingers enough to reach keys that are too far away that other players might have no issue to use.
AC Origins, Mirage, Odyssey, Valhalla and probably some more earlier games have pretty good option to change where keys should be assigned and combine keys with game mode like when riding you can use <C> for umount or when not on mount (another mode) climb down when on a wall or use <C> for something else while in menu etc. In some cases holding or only press key for short duration have different meaning in game as for what command it is supposed to perform.
That something those earlier AC games wasn't that good to handle (there are that "shift" key for HIGH and LOW in AC and that made it possible to use same key for different task, but it isn't as good as when one can assigned key independent on HIGH or LOW (which is game mode).
Most keyboard designed for gaming and most mouse have drivers and apps to compensate when games have limitation for key bindings that helps a lot and @TazzieDevil did suggest one mouse that this person found that worked to play this game.
In general MMO mouse are more expensive then other gaming mouse, but offer more freedom as for how to set up key binding.
It will always take some trail and error to find out what work best for one self, but it is worth to avoid getting serious injures from too many small movements in fingers or thumb and the same for what limitation there is to directly make use of key bind in game or that one have to make use of mouse or key boards app to set up what each key are supposed to do.
As for using bow there is also DPI that can be changed with a button press that can help the limitation that some AC games have to aim on target that move fast or using Eagle/Bird to locate targets and view surroundings (which is connected to settings for aiming). High resolution displays down side is with low DPI it can really feel in your wrists after sometime if you have to move a lot to control aiming or character, so this is also important to avoid too much stress on wrists and elbow/shoulders.
