As for character creation, you cant really create characters, just pick between male or female protagonist.
Of the two, I'd recommend 'Odyssey' as a head and shoulders above Valhalla. Valhalla has some good ideas but the gameplay is inferior to Odyssey and the setting is just tired and boring.
Both characters, Kassandra and Alexios, have good voice actors (the one you don't play shows up, rarely, as an npc) and solid performances, but most people agree that Kassandra is the superior experience.
In 'Origins' you play Bayek, who has no options in dialogue but his missions are still interesting and he is a nicer guy than any of the other characters. Both Origins and Odyssey are worth your time and money.
Is it like Fallout/Skyrim? Never played AC before
Yeah that is pretty accurate. Great game, 110 hours in and still haven't finished main story or started DLC's, 95% of quests have different story, lots of beautiful landscapes, combat is good, For a 20 its a steal.
