Stealth is a big part of Odyssey.
In the game there are 3 types of damage, of which the Assassin type is by far the strongest.
In later game there is an ability that let you use Assassin damage in frontal combat, but it recharges slowly. In early and mid game you have no such option and playing with only Warrior and Hunter damage is not possible in high difficulty and will be slow and ineffective at low difficulty.
You can use Hunter damage (bow and arrows) to circumvent the need to assassinate, but this still requires you to avoid frontal combat.

you are completely open to play frontal combat from lvl 1 if u want, yes stealth playstyle is stronger but it is an OPTION which the op asked about.

This guy is lying to you. You can play the entire game without using stealth more than a handful of times. You could create a fully viable Warrior/Archer build and barely even dabble in stealth if that's what you want.
To begin with, shut up about lying, because if anyone lies here at all - it's you.
First nonsense you said - there is nearly no consequence for builds in early game and there are only handful of abilities. Bonuses of +1,2 or 3% are negligible. So your "warrior or hunter build" has nothing to do with reality.
2nd one - relying on hunter is not what OP asked for - he explicitly said he wants open, frontal battle. Not sneaking around with a bow which takes ages with targets like Kleptous bay.
It is much faster to assassinate there.
Later in the game - sure. When you have upgraded spear, many more abilities and meaningful bonuses. But early game is not short. I doubt someone who dislikes stealth will hold on to the point he can just kill everybody.
Perhaps you should play another run of the game, your memory does not serve you well.
In easy/normal you can fight your way through with melee. On hard/impossible I think only few players can do this.
That said I play a lot of souls games and through the Witcher 3 a few times so the combat feels pretty natural.
I would say the first legendary animal hunt, the giant boar, was the hardest fight in the game, being stun locked constantly. I don't think being stealth built would have helped.
It's kind of funny the ultra bad mythological bosses were a breeze compared to that dang boar.
In my opinion stealth is required in a sense you need to use discretion and pick your fights. Stealthing is a must, going a stealth build is not.
Currently playing on nightmare and i'm at lvl 24, early on being stealthy and assassinating helps a ton to make up for your lackluster gear and abilities but as your gear gets more optimized and you get more passives and actives, you can start just going ham on small camps and bases.
However i still find myself thining out the enemies with assassinations on big forts especially when theres a strong bounty hunter ( those using daggers w/ poison + doesn't get staggered are the worst so far ) and a leader.
So - did you actually did this? Played on hard/nightmare without assassinations up to, say, level 10?

Oh, I am sure there are people who can do this. I have no doubt Let Me Solo Her can do this easily, and anyone who managed Dark Souls will.
But for most people it will be an exercise in getting killed a lot.
I even made sure my bounty was full 5 stars so I would get stalked so i can farm epic gear
This. Though Assassin build is probably the easiest one to go through the game, you can definitely do without it. In mid-late game you are OP with many warrior abilities.
Since builds have little to no meaning in early game, you have to use stealth when the other option is open conflict with tons of enemies.
Once builds start to play role and you have decent abilities you can just go shenanigans and butcher everyone.
