"Phoenix" is the new name of your mother ingame when you search for her and thats get triggered during chapter 5 when you talk to Xenia the pirate.
Sphinx, Medusa, Cyclops and Minotaur. Which of those do you have a problem with?
The official " beginning" of the quest is during the "Family Ties" quest in chapter 7 you get from your mother to find your real father.
Follow that and that will start the whole quest chain to find the artifacts and will automatically lead you to the Sphinx.
The other 3 monsters can be done before if you find their quests in the world.
Are you already in chapter 7 and did you find your mother? You get this quest automatically after you help her secure Kyros and then leave for Sparta. She gives you a side quest called " Family Ties" that starts this whole quest chain.
