Like the title says, is it possible for you to join a faction, such as spartans?

You're fighting both and neither at the same time.
Capturing a zone just changes the color of the flags on the walls and the type of guards you'll encounter.

that's a shame, I was really hoping I could bring Sparta to victory
Yeh hated the reviews / prerelease talk of "dont worry later you can join a side" or "But later down the line you can chose who you like" then days after release im like..wth was everyone saying.

Thats impossible. Odyssey is set in 431 BC which was the start of the war, it lasted nearly 30 years after that. Since the AC games try to be accurate there was never a chance that you could influence those historical events.

Historically, Sparta wins.

As it was said. This is set right at the start of the war, so you can't really make a decisive win for any one side.

You're a mercenary, so you ARE free to choose who to fight for.

But the war will not end with our intervention

The unicorn and other horse skins are just cosmetic and dont get recognized by anyone in the game. For the sake of the story you just riding a normal horse.
The minotaur is an Isu hologram construct and fits into the AC storyline about the first civilization. Does not influence historical evens.

The Spartans did win the war historically without the mercenary's help so that still counted as something right?

no, according to what i learned during ancient history lectures war was a male only thing in ancient greece, even in sparta, woman did not become soldiers and did not get comabat training, again even not in sparta, the only exception were queens.
