I don't know if Odyssey is going to use the same DRM scheme, or if Ubisoft has found a way to minimize it's impact (assuming that was the issue before), but you might try renting it on the Pro, if that's an option, and seeing if it doesn't run smooth and look nice there, while PC gamers have a day or two to report back on performance here.
I'd say if you're willing to play Origins on PC, there should be no problem playing Odyssey on PC too.
I have a 240 hz too, if you have BenQ with DYAC then its well worth it too cause even at 90 FPS it feels much smoother like 144hz.. even without I consider 80fps with high refreshrate monitor to be far superior then 60hz or 60fps
Save PS4 Pro for Red Dead Redemption 2 and exclusives like The Last of Us 2 etc...
Is that confirmed somewhere? On my 17-4790k, 980 gtx, 16gb ram pc I was able to play Origins on high and get 60fps outside of cities. Once inside it fluctuated too much and I ended up locking it to 40fps, which was fine for me.
So same as Origins but more optimized would be great for me.
Hell, the most issues I've had are running Stellaris and Total War: Warhammer 2 at the same time.
Is there really such a big difference between the 7500 and 8600?
yes, yes it is

in perspective if you have i7k models it takes a good 3 generations before you reach 31%
